Ingredients

Yeast, active dry, 1/4 ounce
Flour, white, 2 cup
Semolina Flour, 1 cup
Olive Oil, 2 tbsp
Roma Tomatoes, 4 diced
Green Olives, pitted, 2 oz, diced
Black Olives, 3 tbsp, diced
Olive Oil, 1/4 cup
Balsamic Vinegar, 4 tbsp
Mozzarella Cheese, part skim milk, 4 oz
Directions
Dissolve yeast in 1 cup warm water. Allow to sit until foamy. Add White and Semolina Flour and 2 tbsp olive oil. Let sit 1 hour, covered with plastic wrap.
Preheat oven to 450 degrees. Roll dough into 32 small balls (I like to seperate the dough into four batched of 8 balls each). Roll balls into small, thin circles and lay 8 on a baking sheet sprinkled with Semolina Flour.
Place diced tomatoes in one bowl, diced olives in another. Add half the olive oil and vinegar to each bowl. Season with black pepper if desired.
Spread a small amount of tomato or olive mixture on each round (or a little of each if you would like) and top with apx 1.5 tsp mozzerella.
Bake 10-12 minutes, until browned and sizzling. Enjoy!
