Ingredients

6 eggs
2 mushrooms
1 large red bell pepper
1 lg slice red onion
1 cup chopped spinach
2 slices Sargento Ultra Thin Colby Jack cheese
Tips
You can add any other vegetables you want to use, and you can exchange the Colby Jack for any other type of cheese you want. I have used String Cheese before and it works beautifully.
Directions
Sautee peppers and onions.
While they are sauteing, slice mushrooms, chop spinach, crack eggs. Add them all together and mix thoroughly.
When the veggies are soft enough - per your taste - add the egg mixture. Make sure the egg covers the entire pan.
Place a tight fitting lid over the skillet, and make sure the heat is on low-med. Watch carefully for the top to be done - you'll know it's done when it is no longer wet as if the egg is still raw.
Tear the cheese in pieces and place them on top of the fritatta at regular intervals. Cover again for a few minutes until the cheese melts.
Slice and serve.
