Ingredients

    Silken Tofu, 11 oz box
    1 Tbsp raw cashew pieces
    Red bell pepper, roasted, including skin
    4 ounces water
    1 Tbsp (or more to taste) Mrs. Dash Southwestern seasoning
    1 Tbsp lime juice
    1 Tbsp rice vinegar
    1/2 tsp garlic powder
    1 Tbsp fresh cilantro leaves
    Pinch of salt
    Dash of black pepper
    Dash of Stevia powder

Tips

I sliced up the red pepper and sautéed in a dry skillet until it was somewhat soft. Leave the skins on for fiber.


Directions

Remove tofu from the box. Throw all ingredients into a blender and blend at high speed until everything is well-blended. Store unused portion in refrigerator for 5 days.
