Ingredients

    1 quart cooked, chopped potatoes
    3/4 c. tofu mayonnaise
    8 radishes, sliced
    1/2 c. celery, diced
    1/4 c. green onions, sliced thinly
    1/2 c. olives, sliced
    minced dill weed to taste
    salt and pepper

Directions

Mix all ingredients together thoroughly. Refrigerate a few hours before serving. Sprinkle with parsley and/or paprika before serving. Very nice!

Serving Size: Makes 15 half-cup servings
