Ingredients

1 cup sugar
1 cup brown sugar
1 3/4 cup all purpose white flour
3/4 cup cocoa
1 1/2 tsp baking powder (half at high altitude)
1 1/2 tsp baking soda (half at high altitude)
1 tsp salt
2 eggs
1 cup skim milk
1/2 cup veg. oil
3 tsp pure vanilla extract
1 cup boiling water
Tips
The batter is very runny after adding boiling water so don't worry. Will bake into amazing cupcakes!
Directions
Preheat oven to 350 and line cupcake tins with paper cupcake liners.
Combine dry ingredients into a mixing bowl. Add eggs, milk, oil and vanilla extract. Whisk until smooth.
Add the boiling water and mix until blended.
Fill cupcake liners to 3/4 full and bake for 20 - 25 minutes or until center of cupcake springs back when touched. Let cool and pipe with frosting of your choice.
