Introduction

Just an interesting spin on mashed cauliflower. I was craving and while it's healthy it feels indulgent. Could easily add chicken, shrimp, beans or other protein to beef up a bit. Ingredients

    3 c cauliflower, cooked
    2 Tbsp fat free half & half
    2 Tbsp light butter
    1/4 c reduced-fat shredded cheese
    1/4 c broccoli, cooked
    1/4 c spinach, cooked
    1/3 c shelled edamame, cooked
    2 ears fresh corn, cooked and kernels removed

Directions

Combine cauliflower, half & half, butter, cheese and a little salt and pepper if you wish and either mash by hand or use a stick blender to almost puree mixture. Stir in remaining ingredients and heat additionally if needed.

Serving Size: Makes 2 dinner-sized portions or 4-5 side dishes
