Ingredients

Chicken livers 400g
2 med onions, chopped
200g mushrooms
14g (1serving) rice bran oil (Hansells, 0 cholesterol)
2 pats butter (1" sq, 1/3" high)
Tips
Adding a little butter to the oil helps to caramelise the onions and mushrooms.
Serve with crusty bread and / or salad.
Directions
Soak chicken livers in a little milk while prepping the other ingredients.
chop and gently fry the onions in about half the mixture of oil and butter, stirring frequently,
wash and slice the mushrooms, when onions are nearly done, add the mushrooms to the pan and gently fry for a couple of minutes, till they are becoming caramelised.
Drain and pat dry the livers, cutting up, if necessary, into even sized pieces. Turn up the heat a little and if necessary, add some more oil/butter. Add the livers to the pan, keeping them moving. Add a small glass of red wine, either now or when the livers are nearly cooked. (I prefer sweet wine with livers) continue cooking untill livers are no longer red in middle. (not long!)
Serving Size: makes 2 main meals with crusty bread, or 4 starters
