Introduction

Ingredients

8 oz chicken breast, cut into bite-size pieces
12 large shrimp, de-veined and detailed
3 Tbsp olive oil
1 c chicken broth
2 basil leaves
3 cloves of garlic, minced
1-10oz package of frozen peas and carrots
1 package of linguine (cook according to box directions)
1 c grated Parmesan cheese
Directions
1. Heat oil in a large skillet or wok. Place in chicken and cook for about 3 minutes on each side. The goal is to not get the chicken completely done because we want it to soak up all the flavors from the proceeding ingredients.
2. Add chicken broth, basil leaves, garlic, and frozen veggies to skillet. Stir frequently until veggies are soft (about 5 minutes).
3. Lower heat on the skillet to about medium low to medium. Add in shrimp & cooked linguine into the skillet. Stir to combine all ingredients, but cover for 2-3 minutes at a time. Do this for about 10 minutes.
4. Remove skillet off of heat and uncover. Toss pasta mix in a large bowl and sprinkle throughout with Parmesan cheese. (Remove basil leaves if you desire)
5. Wa-La! Dinner in a skillet! It isn't necessary to have sides with this meal, but you could start the meal with a dark green salad topped with a drizzle of lite Raspberry Vinaigrette dressing. From my family to yours... we hope you enjoy!
