Ingredients

    8 Yellow, orange or red bell peppers
    16 Plum Tomatoes
    4 Cloves of Garlic
    16 Anchovy fillets
    2 T Olive Oil

Directions

Cut tops off peppers & wash thoroughly. After washing tomatoes, cut them in eighths. Stuff the Peppers with the tomatoes. Next, sliver the garlic. Place about 3 slivers on top of each pepper. Finish the peppers by adding 2 anchovies, diced, to each pepper and then drizzle the olive oil over the tops. Bake at 350 F for about 1 hour.
