Introduction

Number of Servings: 25

Ingredients

    FILLING
    2 c. shredded unsweetened coconut
    1/4 c. coconut oil (may need to add 1 T. extra)
    1/2 t. vanilla extract
    4 T. butter, melted
    Stevia in the raw or liquid stevia to taste (I used 2 packets)

    COATING
    3 squares unsweetened baking chocolate
    1 T. coconut oil
    Stevia in the raw or liquid stevia to taste

Tips

After dipping, you could roll the balls in additional coconut if so desired!


Directions

In food processor, combine first 5 ingredients. Refrigerator until set. Don't allow to refrigerate too long, or the dough will become rock hard!

Roll into ~1" balls (a little smaller). Place on parchment paper-lined baking sheet. Refrigerate.

In saucepan, melt chocolate. Add coconut oil and sweetener. Dip coconut balls completely into chocolate mixture and return to baking sheet. Freeze until you want to eat.

Serving Size: Makes ~25 balls

    Not bad, easy to make. I think the filling needs a little less stevia for my tastes. - 6/1/17
