Ingredients

    3/4 lb pork tenderloin, trimmed
    2 cups mixed baby greens 1 nectarine, pitted and sliced
    2 cups sliced fresh strawberries
    1/4 cup sliced almonds, toasted
    1 tablespoon fresh lemon juice
    2 teaspoons honey
    2 teaspoons chopped fresh mint
    2 tablespoons olive oil
    1/4 teaspoon salt
    1/4 teaspoon pepper

Directions

Preheat grill to medium-high heat; grill pork,
covered with a grill lid, 10 to 12 minutes, or
until, turning occasionally. Combine mixed
greens, nectarines, strawberries and almonds
in a serving bowl. Whisk together lemon juice,
honey, mint, oil, salt and pepper. Slice pork and
add to salad mixture; pour dressing over top
and toss to combine.

Serving Size: makes 2 servings
