Introduction

Ingredients


    Red Onions, raw, 1 large
    Ginger Root, diced from approx 3" root
    Garlic, 6 clove
    Curry powder, 4 tbsp (this is spicy, reduce if you want mild, can be adjusted at the end)
    Salt, 1 tsp
    Cilantro, raw, entire bunch
    Cauliflower, raw, 8 cups (florets from 2 medium heads)
    Coconut Oil, 0.5 cup

Directions

toss cauliflower and chopped red onion with 1/2 of total curry powder and salt. Add coconut oil and toss to coat.

Bake on 400 for 25 minutes. Add diced garlic and ginger and toss to combine. Bake for an additional 5-10 minutes until garlic and ginger have softened. Remove from onion and toss with cilantro and peas if using. add reserved curry powder and salt to taste. can be served hot or cold.

Serving Size: makes 5 large side servings approx 1.5 cups each
