Ingredients

    4 cups raw baby spinach
    8 oz cooked chicken breast, sliced in strips
    1 small roma tomato, sliced into cubes
    1 medium cucumber, sliced
    1/2 cup jalapeno cilantro hummus
    1 lemon, sliced in half
    2 tbsp fresh cilantro
    fresh sliced red onion

Directions

1. Place baby spinach in large bowl and top with chicken, tomatoes, cucumber, and 1/4 cup fresh hummus.

2. Sprinkle with fresh cilantro, top with red onion and a fresh lemon half.

Serving Size: Makes 2 large salads
