Introduction

Ingredients

    1 reduced fat graham cracker pie crust
    8 oz fat-free cream cheese
    3/4 c. pink lemonade concentrate (not mixed with water)
    14 oz fat-free sweetened condensed milk
    2 tbsp lemon juice
    1/3 c. reduced fat unsweetened coconut, shredded
    1 c. Cool Whip Free

Tips

For added flavour, use a flavoured whipped topping or add fruit juice.


Directions

Beat cream cheese and condensed milk with a handheld mixer on low until softened.
Add pink lemonade and lemon juice, and beat for another 45 seconds until smooth.
Pour mixture into pie crust.
Spoon whipped topping and sprinkle with coconut.
Freeze until firm.

Serving Size: Makes 8 slices.
