Introduction

Had brunch at Brewed FW today - it was fabulous! This egg white omelet was very flavorful and filling. I did ask for less cheese, which is reflected above.

I hope this is close enough to the original version to give an accurate calorie count!

Number of Servings: 1

Ingredients

    4 egg whites
    1/4 C skim milk
    seasonings (if desired - like salt or garlic)
    2 Tbsp Olive Oil
    2 medium slices of an onion
    2 C raw spinach
    1/2 C chopped mushrooms
    1/2 oz. gouda cheese

Directions

Preheat two small pans over medium heat. Add 1 Tbsp olive oil to EACH pan.

First, chop the onion slices in half and separate the onion layers. Add the onion, spinach and mushrooms to one pan. Stir frequently. Cook til spinach is wilted and onions are translucent.

Meanwhile, beat egg whites and milk till fluffy. Add seasoning; pour into the second pan. Cook till firm.

Ease the egg white omelet onto a plate. Top with sauteed onion, mushroom, and spinach, and finish with 1/2 oz. gouda cheese.


Serving Size: Makes 1 omelet
