Number of Servings: 6

Ingredients

    1-1/2 lbs ground meat (my family likes moose or venison)
    1/2 C white rice, uncooked
    1 t salt
    1/2 t pepper
    1 T minced onion
    1 C tomato juice
    1/2 C water

Tips

Serve over rice.


Directions

Combine meat, rice, salt, pepper, and onion. Shape into small meatballs.

With no rack in the bottom of the pressure cooker, pour the tomato juice and water into the cooker. Turn on the heat to medium high. Place the meatballs into the juice and water mix in the cooker, jostle it a little bit to help them all fit on the bottom.

Close the cover securely. Heat on med high until the steam is rising in a stream from the vent pipe. Place the pressure regulator on the top. Drop the heat to medium and the regulator should start rocking slowly. Cook thus for 10 minutes.

After 10 minutes, turn off all heat and let the pressure drop of its own accord (about 10 more minutes).

Serving Size: Makes 36 little meatballs and gravy
