Introduction

This is great for serving larger crowds, we often use it at Thanksgiving or Christmas. It can be prepared ahead of time and refrigerated until ready to cook. It is also great when time is short in the morning. I usually make a double recipe on Sunday and it gets us through the week. Just 45 seconds in the microwave and you are on your way. Ingredients

    4 whole large eggs
    8 large egg whites
    18 Tater Tots (baked)
    4 Turkey Sausage Patties (pre-cooked)
    1 cup shredded cheddar cheese
    Salt & Pepper to taste

Tips

Let cool slightly then cut into 8 even pieces. If you are serving a larger crowd and want to prepare a day or so ahead just double the recipe, and refrigerate until needed.


Directions

Preheat oven to 400. Brown Tater Tots on cookie sheet for 20-25 minutes. Remove and let cool. Reduce heat to 350. Spray 8 x 10 glass baking dish with non-stick butter flavored spray. Cut pre-cooked sausage patties into small pieces. In separate bowl whisk eggs and egg whites. Add Salt & Pepper to taste. Crumble Tater Tots into bottom of glass dish. Sprinkle sausage pieces evenly over Tots. Pour egg mixture evenly over tots and sausage. Sprinkle cheese over top. Cook 30 minutes covered with foil. Remove foil and cook an additional 10 minutes.
