Introduction

I made this one night when I wanted to spice up my roasted broccoli/tomato salad...savory and tastey! I made it in our Ninja, which gave a perfect consistancy. Ingredients

    2 cups spinach
    3 tbsp chopped avacado
    1-2 cloves garlic
    1/4 medium red onion, chopped
    1 tbsp lime juice
    1 tbsp chipolte or other hot sauce
    1 tbsp Extra Virgin Olive Oil


Tips

This can be used on salad, as a veggie dip, or baked on a pita or whole grain tortilla "pizza".


Directions

Put spinach in a food processor and pulse for about 10 seconds. Then add avacado, onion, garlic and pulse until finely chopped. Slowly add the lime juice, hot sauce and finally the olive oil.

Serving Size: Makes about 1 cup
