Introduction

So easy! So easy!
Number of Servings: 24

Ingredients

    1 box Spice Cake Mix
    1 15 oz can Pumpkin (not pie mix)
    1/3 cup Applesauce
    1 egg
    1 tsp vanilla

Directions

Preheat oven to 350 F.
Gently fold together all ingredients. Mixture will be light & airy.
Drop by heaping tablespoons into greased muffin cups or use muffin liners.

Bake 18-22 minutes or until toothpick inserted comes out clean.

Makes 24 muffins.

    I liked this recipe a lot. I used an egg beater and instead of vanilla I added pumpkin pie spice. They were a hit with my weight group too. - 11/20/08

    Amazing! So light and fluffy and they come out perfectly moist. I used Egg Beaters instead of real egg and they are still perfect! I've tried every pumpkin muffin recipe I can get my hands on, and these are hands down THE BEST. - 2/23/11

    Made these with 1/2 cinnamon applesauce, 1 t. vanilla, NO egg, added more cinnamon, 1/3 c. brown sugar. Topped them with crushed walnuts & brown sugar - 4/18/10
