Ingredients

    2 tbsp Nutiva cold pressed extra virgin coconut oil
    4 large carrots chopped
    1 large onion sliced
    1 tbsp dry basil (or 3 tbsp fresh)
    1 quart chicken stock (or vegetable stock) (homemade to reduce sodium intake)
    Salt & pepper to taste

    Optional (not calculated in this recipe)
    1 pint heavy cream- add until desired consistency achieved
    Or
    Coconut cream for vegan or lactose free

Tips

Tastes better next day, favors meld together


Directions

Sauté carrots & onion till soft, add basil
Sauté 5 more mins
Add tomato & broth, bring to boil
Reduce heat and simmer 30-45 mins
Cool slightly & purée
Strain for smoother texture
Add cream if desired
