Ingredients
-
1 9" graham cracker pie crust, baked 15 minutes, or prepared according to package directions
FILLING:
1 cup low-fat cream cheese, softened to room temperature
2/3 cup plain nonfat yogurt
1/4 cup nonfat milk powder (just the powder!)
1/2 cup honey
2 teaspoons vanilla extract (or to taste)
Tips
Before serving, top with fresh fruit, frozen fruit, or pie filling of your choice -- don't forget to add it separately to your Nutrition Tracker!
I am writing this recipe utilizing a store-bought graham cracker pie crust. You could also use a chocolate pie crust, chocolate graham cracker crust, or make your own crust from scratch. (Don't use a traditional flour-based crust, though, since it doesn't work very well as a frozen crust.)
You can lighten the recipe even more by using fat-free cream cheese. This is written with low-fat cream cheese.
Other variations:
-Use vanilla or other flavoured yogurt instead of plain.
-Use almond extract instead of vanilla. Use more extract for a stronger flavour.
-If you prefer sweeter, add more honey (don't forget to add the calories!).
Directions
2. Add in the milk powder a little at a time, and beat until smooth.
3. Add honey and vanilla extract, and beat until smooth and all ingredients are thoroughly combined.
4. Pour filling into pie crust, and smooth out with a knife or spatula.
5. Place in freezer until pie is firm (My guess is about 3 hours or so).
6. Top with fruit of your choice when you serve.
