Ingredients

    1 cup quinoa, picked and rinsed
    2 cups hot water
    1/2 tsp ground cardamon
    1/2 tsp ground coriander
    1/2 tsp ground black pepper
    1/2 tsp chili powder
    1 tsp sea salt
    3 Medium carrot, peeled, halved, chopped
    1 medium apple, cored, chopped
    1 medium red onion, very thinly sliced
    1 1/2 tbsp olive oil
    zest of one lemon
    2 tbsp freshly squeezed lemon juice
    1 tbsp fresh parsley, finely chopped

Directions

Preheat oven to 425F/ rack in middle

in small bowl combine cardamon, coriander, black pepper, chili powder, and 3/4 tsp salt.

9x13 backing dish add carrots, red onion, apples, and Olive oil. Add spices and stir to combine.
In 8inch baking dish and the quinoa and spread into even layer.
place both dishes into oven/
let quinoa roast for 7 to 8 min. take out pour the hot water over it. cover with aluminum foil. place back in oven for another 15 to 20 min. Remove and fluff with fork. recover and set aside.
stir veggies occasionally. veggies are ready when onions start to caramelize, about 30 min.
when veggies are done, uncover quinoa, stir in the remaining 1/4 tsp salt, lemon zest, lemon juice, and parsley.
