Number of Servings: 6

Ingredients

    1 LB Ground Chicken
    1 Red Pepper
    1 Green Pepper
    1 Medium Onion
    3 Cloves of Garlic
    .5 cup of Sun Dried Tomatoes (not in oil)
    2 oz Walnuts
    2 TBS Olive Oil

Directions

Chop Onions, Red and Green Peppers and saute in olive oil until onions are clear. Add the garlic and saute for 1 minute. Add ground chicken and cook until all pink is gone. Add walnuts and sun dried tomatoes and cook for 2 minutes.

Makes 6 servings

    Very Good
    I added broccoli and mushrooms. Substituted slivered almonds for walnuts because that is what I had on hand. Used smokey dried tomatoes. Served over brown rice. I thought it was really tasty. My husband thought it could use something more -- maybe soy sauce? - 4/29/11

    Just OK. I added fresh ground ginger and soy sauce and a bit of sherry. Seasonings are similar to a recipe I've made before. The sun dried tomatoes didn't do much for it. I had it over .5 cup brown rice. - 1/18/11

    Very Good
    Very interesting! I hadn't tried anything like this before! Filling and healthy, and it tastes so good :)
    I only cut down on tomatoes since I wasn't sure I would like them so much.
