Ingredients

    Beans, black, 1 15 oz can
    Bell pepper orange, 1 large
    Onions, raw, 1 large
    Zucchini, 2 cups
    Cilantro, 1/2 cup
    Cumin - ground 0.5 tsp
    Chili powder, 0.5 tsp
    Garlic (1 clove)
    Olive Oil, 2 tbsp
    Salt, 0.5 tsp
    Pepper, black, .25 tsp

Tips

You can serve this with tortillas or on a bed of brown rice. I did not add that into the nutritional information.


Directions

Heat a medium skillet with vegetable oil and saute vegetables until almost done. Add all of the spices and saute for a few minutes more. Remove from heat and add the cilantro, chopped up.

Serving Size: Makes 4 1-cup servings
