Introduction

Ingredients

    3 chicken Breasts (about 3-4 oz each)
    Panko Bread crumbs, 0.25 cup
    1 small zucchini, .5 cup
    1 Egg, fresh, whole, raw
    Balsamic Vinegar (2 tbsp)

Tips

Nutritional info is calculated based on 1/2 an egg. Since the egg is only in the coating, you really aren't eating the whole egg (probably a less than a 1/2 really, but depends on how long you coat the chicken).

Also, this chicken has a VERY light balsamic taste


Directions

1. Place balsamic vinegar in bowl. Slice a small zucchini and and place in bowl - mix well to coat the slices then remove zucchini. (could substitute with yellow squash)
2. Beat one egg into the remaining vinegar.
3. Dip each chicken breast in vinegar/egg mix then coat with Panko Flakes (I usually put .25 cup of flakes in a plate).
4. Assemble chicken breasts and squash in baking dish.
5. Cook at 350ºF for 20 minutes or until Chicken's internal temp is 165º
