Ingredients

    Spaghetti squash/cooked and forked to make spaghetti
    zucchini- one large
    mushrooms, two fresh 8 ounce packs cleaned and stemmed
    onion, one really large one
    coconut oil 3 tablespoons
    Pasta Sauce- I used a jar of tomato basil sauce

Tips

This is delicious. I ate two cups at one setting and froze the other 5 servings (2 cup each) for later.


Directions

Saute onions and garlic in 1 1/2 TBS Coconut oil. Add mushrooms. In a different skillet saute zucchini in 1 1/2 Tbs coconut oil. Saute until you like the consistency. I like mine soft with a little body. Add the two skillets together (I used a large cooking pan.) Add pasta sauce of your choice. I used organic tomato and basil sauce. Cook until the sauce in hot and all is blended. You could add cheese or chia seeds, or whatever suits your fancy.
