    - Mixed veggies (we used two carrots, two capsicums (peppers), most of a garlic clove, two bunches of bok choy and an onion)
    - 1 tin low fat coconut cream
    - 1 tbsp sesame oil
    - 1/2 tbsp olive oil


1. Heat wok and add olive and sesame oils
2. Add onion and lightly cook
3. Add other veggies, except garlic and bok choy
4. Add garlic and stir through
5. Add coconut cream, put lid on and simmer
6. Add bok choy
7. Remove from heat once bok choy has cooked (won't take long!) and serve immediately.

Makes 3 services - great dinner for 2 + lunch for one person!
