I do pasturize my egg first before using them in this recipe. It's a very easy process and you can learn how on the internet. I highly recommend you do this to prevent salmonella.You can also add in chipoltes in adobe sauce for chipolte mayo, or pesto for pesto mayo or anything you want. Love this stuff!
