Introduction

I made this up for a friend's daughter. I was pleased with the way they turned out, but might try it with only corn flour and no cornmeal. I made this up for a friend's daughter. I was pleased with the way they turned out, but might try it with only corn flour and no cornmeal.

Ingredients

    3/8 cup cornflour
    1/8 cup cornmeal
    1/8 cup unsweetened applesauce
    1/2 T flax meal
    1.5 T extra virgin olive oil
    1/4 c sugar
    1/2 tsp vanilla extract
    1/2 tsp baking powder

Directions

Mix applesauce and flax. Add oil and sugar. Stir in remaining ingredients. Spoon onto lightly greased baking sheet. Bake at 350 for about 10 min (until lightly browned on edges). Cookie will be soft.
