Ingredients

    1 1/2 lbs. salmon (I use leftover fish but you can also use canned.)
    2 eggs
    1/4 to 1/2 cup Progresso bread crumbs - Italian style
    2 Tsp. Old Bay Seasoning
    2 Tbsp. olive oil

Tips

These can be served with condiments like tartar sauce or cocktail sauce. They can also be served on a bun with lettuce, mayo, and a pickle as a nice sandwich.


Directions

Use a fork to break apart the fish. Add eggs, bread crumbs, and Old Bay. Mix just until combined. Divide in 6 equal balls. Flatten each ball into the size of hamburger patty.
In a large sauté pan heat olive oil on med-high heat. When the oil is hot enough to sizzle a droplet of water, gently place the patties in the pan. Cook until the patty is golden brown then turn over. Once both sides are brown remove from heat and serve.
