Ingredients

    1 bushel green onion, 1/8 in cuts
    1/2 pkg bacon, 1/8 in cuts
    4 lg eggs, scrambled, 1/8 in cuts
    2 c rice, cooked (rice cooker cups)
    1/4 c soy sauce, lower sodium

Tips

1) I often add salt, pepper, water to egg just a style
2) Often use rice refrigerated overnight, less moist
3) Flavor can be enhanced by using bacon grease for egg and final saute/mixing. Or less fat by discarding grease and using cooking spray if needed.


Directions

While rice cooks, cook bacon, scramble egg, chop green onion to a bowl. Remove bacon to cutting board to cool while egg cooks (pancake style, not scrambled). When bacon is cool, cut and put in green onion bowl. remove egg to cutting board to cool while sauteing green onion and bacon together. When onion is mildly cooked, mix in rice in parts removing lumps. After all rice is added, mix in soy sauce. When done mix in egg after cutting gently to prevent egg from breaking apart.

Serving Size: makes 3 servings, divide equally, about 11 oz each
