Ingredients

    Raw White Onion Medium
    Olive Oil, 2 1tsp
    Garlic, 3 clove
    Jalapeno Peppers, 1 pepper
    Ginger Root, 2 tsp
    Canned Tomato
    13.5 oz can organic coconut milk (light)
    Cilantro, 1 tbsp
    Curry powder, 1.5 tbsp

Tips

substitute low sodium tomatoes. You could use yogurt instead of coconut milk but I like the sweet.


Directions

Slice onion, dice jalapeno, garlic and ginger.

Heat oil in pan and add onion, garlic, ginger and jalapeno, cook for about 5 min or until soft.

Add Curry Powder and cook for about 1 minute. Add tomatoes and coconut milk. Simmer for about 20 minutes until sauce thickens.

Garnish with cilantro
