Introduction

Number of Servings: 4

Ingredients

    1 head of Kale
    1 small Shallot
    1/2 -1 lemon depending on how juicy
    1 TBS olive oil
    1/2 container of cherry tomatoes, halved
    salt and pepper to taste

Directions

Dice shallot and add olive oil and lemon juice in a small bowl

Cut out the stem of each leaf of kale
Working in batches, cut kale in to very thing slices

Dress kale leaves with the lemon juice mixture and add salt and pepper

Really mix the dressing in to the leaves, the salt will help soften the kale. Let sit for 10 minutes.

Add cherry tomatoes

    I sub fresh from the garden chives in place of the shallots and added a small amount of garlic granules. I also didn't have cherry tomotoes so used a couple of large ones chopped into small diced pieces. It was pretty good. I do love my kale and this was my first attempt as raw salad with it. - 5/11/08

    I'm not a big kale lover, but it's so good for you & easy to grow that I try to eat it every day in the summer. I usually add it to other chopped greens for a somewhat traditional salad. I also cook it and put it on a multigrain flat bread with a squirt of lemon, 2% cheese & tomatoes for breakfast - 8/25/09
