Ingredients

    Chicken Thigh, 4 thigh, bone and skin removed
    2 TBSP olive oil
    Garlic, 3 clove
    2 chopped Shallots
    .5 C chopped fresh onion
    one package small baby carrots
    3 Celery stalks diced
    2 medium potatoes diced
    2 small Zucchini diced
    1 Can Diced Tomato
    8 cups low sodium chicken broth
    0.5 C chopped Fresh Parsley
    0.5 C chopped red bell pepper
    1 can white Beans
    1 C chopped fresh kale

Tips

goes well with a crusty sourdough bread


Directions

sauté onions, celery, garlic and shallots in olive oil until translucent
put in crock pot with the rest of the ingredients cook on high for 3 to 5 hours
