Introduction

Ingredients

    1 1-lb. can salmon (or three 6 1/2 oz cans grated tuna)
    3T butter (or substitute)
    3T flour
    salmon liquid plus sufficient milk to make 1 cup
    1/2 tsp. salt
    1/4 tsp. pepper
    2 T minced onion
    2 C bread cubes (about 4 slices)
    1 egg, beaten

Tips

I often just pat this out like hamburger patties and cook it on the griddle, to save the oven time. With tuna you may need to cut down on salt, according to taste. A little lemon juice added before baking adds to the moisture and flavor of the tuna loaf.


Directions

Drain canned salmon, saving liquid. For tuna use full cup of milk. Remove skin and bones from salmon. Make white sauce by blending butter or substitute with flour over medium heat. Add all liquids and cook, stirring frequently. Add seasonings. Mix sauce with salmon or tuna and remaining ingredients. Shape into loaf pan and bake uncovered.Bake one hour in a 350 degree preheated oven.
