Ingredients

4 cups shredded green cabbage (about 1/2 cabbage)
4 cups shredded red cabbage (about 1/2 cabbage)
1/2 green pepper, sliced thinly
4-6 green onions, chopped
1 carrot, shredded
1/4 cup minced fresh parsley
Dressing:
2/3 cup cider vinegar
1/3 cup olive or canola oil
1 Tbsp. celery seed
1 tsp. dry mustard
Tips
Notes: If you are in a hurry, use 2 packages of coleslaw mix and add the green peppers and onions. Then make the dressing including the sugar in the dressing. Pour over the cabbage and chill as long as possible. The longer the chill, the better it tastes!
If you want to use just one package of coleslaw, then use only half of the dressing.
Also, if one thinks the salad is too sweet, add a little salt to the dressing and/or increase the amount of vinegar to taste.
Directions
Combine salad ingredients with 1/2 cup of sugar. Let stand 2 hours.
Put all dressing ingredients in a small saucepan. Bring dressing ingredients to a boil over medium heat. Pour mixture over cabbage, cover and refrigerate overnight, stirring twice. Add parsley prior to serving.
