Introduction

Ingredients

    2 large green peppers
    2 large onions
    2 yellow peppers
    2 red peppers
    1 orange pepper
    2 Zucchini (med)
    3 tbsp of Extra Virgin Olive oil
    Epicure Vegetable seasoning- 2 tsp

Tips

you can add tomatoes if you like. (very low cal) This dish is lots of volume but low cal... :)


Directions

Cut all the vegetables in large chunks. lay them on a baking sheet or stoneware pan. Sprinkle olive oil and seasoning over the vegetables. Put in oven at 450 degrees for 15 minutes. Check at 12 minutes, as ovens vary in heat... enjoy.
