Ingredients

Imagine Organic Low Sodium Chicken Broth, 6 cup
Garlic, 4 clove, chopped
Fish Sauce, 2 tbsp
Ginger Root, 2 tsp
Lemon grass (citronella), fresh, 1 tbsp, minced
Chicken Breast (cooked), 8 ounces
Bean sprouts, 1 cup
Bok Choy, raw-shreaded, 1 cup
Soba Noodles, 84 grams
Cilantro, raw, 6 tbsp
Mushrooms, fresh, 60 grams, chopped
5 Scallions (green onions), chopped
Tips
Egg or rice noodles may be used, if desired.
White or brown rice may be subbed instead of noodles.
Jalapenos can be added with chicken and noodles for a spicier dish.
Directions
Roast chicken in oven, seasoned with salt and pepper.
While chicken is roasting, chop garlic, grate/chop ginger, mince lemon grass, shred bok choy, chop cilantro, chop mushrooms.
Cook soba noodles. When cooked, rinse under cold water.
Remove chicken from oven, and allow to cool. When cool, cut into cubes.
Combine chicken broth, fish sauce, garlic, lemon grass, and half of the chopped green onions into a pot, bring to a boil. Reduce to a simmer and cook for 10 minutes. Add noodles and chicken, cook until heated through (5 minutes).
Divide between two bowls, add remaining green onions and cilantro.
Serve.
