Ingredients

6 slices center cut bacon, cooked & crumbled
1/2 medium onion, chopped
2 garlic cloves, minced
1/2 (32 oz) package frozen Southern-style hash brown potatoes
3/4 cup fat free cheddar cheese, shredded
1/4 cup fat free sour cream
3/4 (10.75 oz) can reduced fat cream of mushroom soup
Salt & pepper, to taste
Directions
1. Preheat oven to 350 degrees.
2. Heat a large pan over medium heat and add onion and garlic. Cook for 4 - 5 minutes or until onions have softened, stirring frequently. Add the hash browns, cover and cook for 15 minutes, stirring occasionally.
3. Combine crumbled bacon, 1/4 cup cheese, sour cream, salt, pepper and soup in a large bowl and mix well. Set aside.
4. Transfer potato mixture to a baking dish lightly coated with cooking spray. Pour cheese mixture over the top and mix to combine. Sprinkle with remaining 3/4 cup cheese. Cover dish with foil.
5. Bake, covered, for 20 minutes. Uncover and bake an additional 30 minutes or until bubbly around edges and cheese begins to brown.
