Ingredients

Zucchini Squash - 1/2 Medium
Parmesan Cheese - 1 Tbsp. Shredded
Panko Breadcrumbs - 1 Tbsp.
Olive Oil - 3/4 tsp.
Kosher Salt - pinch
Directions
Preheat oven to 400 degrees. Line one baking sheet with foil and spray lightly with no-stick spray.
Wash and dry 1 medium zucchini. Cut in half evenly. Put 1/2 zucchini in a plastic bag and refrigerate for later use. Take the remaining 1/2 zucchini and slice into 1/4" rounds. Toss with oil, coating well.
In a wide bowl or plate, combine breadcrumbs, parmesan, and salt.
Place rounds in parmesan-breadcrumb mixture, coating both sides of each round, pressing to adhere. The mixture will not completely cover each round, but provides a light coating on each side.
Place rounds in a single layer on baking sheet. Sprinkle any remaining breadcrumb mixture over the rounds.
Bake for about 22 to 30 minutes, until golden brown. There is no need to flip them over during baking - they crips on both sides as is.
