Ingredients

    1 large eggplant, peeled, (approx 1-1/4 lbs)
    2 egg whites beaten in a shallow bowl
    1 cup plain breadcrumbs
    1/2 cup parmesan cheese
    1 TBS olive oil

Directions

Coat a cookie sheet with 1 TBS olive oil and set aside. Preheat oven to 425 degrees F. Combine breadcrumbs and parmesan cheese in shallow bowl. Lightly beat eggwhites in a separate shallow blowl.
Slice peeled eggplant into 12 slices. Dip each slice in eggwhite then in breadcrumb-parmesan mixture turning slices to coat completely. Place each slice on oiled cookie sheet. When all slices are on cookie sheet, spray tops lightly with cooking spray. Bake in preheated oven 8-10 minutes, then turn over and continue baking until tender, another 5 minutes or so. Serve plain or with sauce (calorie count is for plain).

Serving Size: Makes approx 12 slices, 3 slices each - serves 4
