Ingredients

    Brown rice – 2 cups cooked
    Mushrooms, Fresh, White Button, Sliced (3 oz / 85g), 1 serving
    Cooked Onion, .25 cup
    broccoli slaw (broccoli, carrots, red cabbage), shredded, 1.0 cup
    Broccoli, fresh, 1.0 cup, chopped or diced
    Garlic, 1 clove
    Ginger Root, 1 tsp
    *Chili Garlic Sauce, 1 tsp
    *Hoisin Sauce, 1 tbsp
    *Pineapple, canned, .5 cup, crushed, sliced, or chunks
    Almonds, .25 cup, slivered
    Cherry Tomatos, 1 cup
    Soy sauce (shoyu), low sodium, .5 tbsp
    Egg whites, Egg Beater Liquid Egg Whites, 2 serving
    Canadian Bacon, 4 slices (6 per 6-oz pkg.)

Tips

Use pre-minced garlic and ginger in a jar. You can also use pre-sliced mushrooms, carrots and broccoli to save time.


Directions

Mix the garlic sauce with 1/4 cup water and set aside.
Heat a wok or large sauté pan over medium heat, then remove from heat just to coat with nonstick cooking spray. Add Garlic and Ginger, and heat lightly.
Dice Canadian bacon to small pieces.

Add the onions, mushrooms, and carrots to the pan or wok, turn the heat to high, and cook for 2 minutes. Add the broccoli, garlic, and ginger, and cook for 2 minutes.

Add the garlic chili sauce and water, Canadian bacon to the vegetables, cook an additional 2 minutes, stir pineapple to combine and heat through, and remove from heat and set aside/

Spray the pan once more with nonstick cooking spray, and add egg whites. Cook over high heat, stirring constantly, until eggs have almost set. Add the rice, stir to combine, then add the Canadian bacon and vegetables. Cook another two minutes, until the eggs have fully cooked.
