Ingredients

1 pkg smoked sausage (any brand)
1 cup sliced mushrooms (canned or fresh)
8 oz thin spaghetti noodles or angel hair noodles
3 cups diced tomatoes with juice (any brand)
1/4 cup parmesan cheese
1 tbsp minced garlic (I used bottled)
1/2 tsp salt
1/2 tsp pepper
1/2 tsp oregano (i used bottled)
1/2 tsp parsley flakes (i used bottled)
1 large pot
1 large skillet
Tips
service with butter bread or rolls
Directions
1. In large pot boil water.
2. add spaghetti noodles (cook per package instructions)
3. while spaghetti is boiling - cut smoked sausage into slices. Using your preference on thickness.
4. spray skillet with cooking spray.
5. add to skillet - sliced smoked sausage, minced garlic, mushrooms, salt, pepper, oregano, parsley flakes and simmer until everything is warmed up pretty well or until mushrooms are softened if using fresh mushrooms. (can add some juice from tomatoes if too dry)
6. Once spaghetti has finished boiling, drain and add noodles to skillet and mix.
7. add tomatoes (no juice yet)
8. add some parmesan and mix...amount depends on your taste preference.
9. add some juice just enough so the mixure is not dry
*If the meal is lacking in taste...add more salt, pepper or parmesan until you reach your taste preferences.
Serving Size: makes 7 nice size servings
