Ingredients

    1/2 tbl olive oil
    1 can yellow corn, drained
    2 medium avacodo's, diced
    6 cups kale, finely chopped and packed in measuring cup
    12 oz roasted chicken breast, chopped
    Dressing
    5 tbl olive oil
    1 garlic clove, minced
    1 lemon, juiced
    2 tbl Dijon mustard
    salt and pepper to taste

Tips

This is really good with shrimp instead of chicken. It's also really good with a couple slices of cooked bacon crumbled in it. also stores really well. good the next day.


Directions

Heat pan until hot. add oil and corn and cook until corn is brown in spots. let cool.
Combine dressing ingredients and mix well/
Pour dressing over remaining ingredients, add corn and toss well. chill at least 1 hour before serving.
