Ingredients

    3 T olive oil
    2 med potato diced
    2 med carrots diced
    2 med celery diced
    1/2 onion diced
    1 can diced tomatoes
    1 can tomato paste
    10 c chicken stock
    1/2 c rice
    5 t dried parsley
    2 bay leaves

Directions

Mix all ingredients in large pot, simmer until potatoes and carrots are tinder. About one hour. We can sprinkle romano cheese (not included in calories)
