Introduction

Ingredients

    1lb Ground Beef
    1can Black Beans (drained and rinsed)
    2cups Salsa
    1package Taco Seasoning Mix
    1tbsp Cumin
    2tbsp Onion Powder
    3cups Cheese
    6 Tortilla (approx. 8" diameter)

Directions

Preheat oven to 350 degrees.

Season beef with salt, and pepper.
Heat skillet (or pan) to medium heat. Cook ground beef in skillet/pan. Drain fat from beef. Add taco seasoning, cumin, onion powder, and black beans to skillet/pan and mix.

Prepare 7x11 baking dish (spray with non-stick cooking spray, rub with butter or oil).

Place 3 tortillas across bottom of baking dish. Cover with 1/2 of meat mixture from skillet/pan. Cover meat mixture with 1.5cups of cheese. Repeat layering (tortillas, then meat mixture, then cheese).

Cover baking dish and bake for 25 minutes. Uncover and bake for 5 minutes.

Let sit for 5 minutes before serving.

Serving Size: makes 8 servings
