Ingredients

    2 cups broth (fat free, reduced sodium)
    1 large onion, roughly shopped
    1 clove garlic, sliced (or to taste)
    1 T light butter
    1/2 tsp ground thyme
    salt and pepper to taste

Tips

You can make a quicker version of this using reserved liquid and cooked onions from a pot roast!


Directions

In a medium saucepan, bring stock, raw onion, and garlic to a boil, Reduce heat and simmer until onions and garlic are soft, about 30 minutes. Add butter and stir until melted.

Blend mixture in a blender or food processor until smooth.

Place mixture back in saucepan and reheat, then season with thyme, and salt and pepper to taste.

Serving Size: Makes 8 1/4 cup servings
