    1 Hubbard Squash
    3 cups Kamut, cooked
    1 cup Wheat berries, uncooked
    1 Carrot, chopped
    1 Onion, chopped
    2 stalks Celery, chopped
    6 oz shredded Mozzarella
    1 tbsp Olive oil
    4 cloves Garlic, chopped


Kamut should soak overnight before cooking. 90 minutes is the cooking time for a fairly large hubbard squash, for a smaller squash reduce baking time. You can add browned sausage or ground beef to add protein.


Halve squash and scoop out seeds

Cook Wheat berries (15 minutes)

Saute onions, carrot, celery and garlic in olive oil.

Mix Kamut, wheat berries, vegetables and mozzarella and fill the squash.

Cover with foil.

Bake 90 minutes at 375.
