Ingredients

    4 cups cubed golden beets
    2 boxes (8 cups) chicken broth
    1 large onion, diced
    4 cloves garlic, minced
    4 tbsp olive oil
    salt
    pepper

Tips

Adding a dollop of sour cream or creme fraiche makes the soup extra smooth, and a pinch of parmesan enhances the flavor, too!


Directions

First dice onions and garlic, and cube the beets. Cook onions and garlic in olive oil until soft. Add broth and beets, and bring to a boil. Once boiling, let simmer for about 30-40 minutes, or until beets become tender. Once tender, remove soup from heat and use an emersion blender (or regular blender or food processor in batches) until soup is creamy and smooth. Add salt and pepper to taste.

Serving Size: Makes about 6 1.5 cup servings
