Ingredients

    2 cups shredded pork (pre-cooked)
    2 tbsp olive oil
    1 small box of raisins
    1 yellow onion, diced
    1 med red pepper, diced
    1 med green apple, peeled and diced
    1 can diet gingerale
    2 stalks celery, sliced
    2 tbsp curry
    2 packets Splenda
    1 cup 2% milk
    Salt to taste

Tips

May use chicken or seafood in place of pork for less calories.


Directions

Saute onion, red pepper, celery, and apple until the celery is clear. Add the remaining ingredients with a half a can of ginger ale. Bring to a boil and add remaining half of ginger ale. Let simmer on low while cooking brown rice.
Serve over 1/2 cup of brown rice (not included in the recipe).
